Let’s be honest, these are the best healthy vegan burritos I have ever tasted. They beat Taco Bell’s – especially when you use fresh organic ingredients. And you if can find yourself some SMOKED paprika!

Just by the color of those vegan burritos, you can see they contain a lot of those healthy vitamins (A, C, potassium, iron, B6, calcium, folate and more). They are also full of proteins, so you bet they are sustaining even to those who say they are always hungry after eating a vegan meal.

It’s a great meal for introducing veganism to your family or for when you invite non-vegans over at dinner — and you can help them make the switch to a healthier and kinder lifestyle.

Those best vegan burritos ever can be adapted to what each member of your family likes. Even for little ones, you can make Monkey Plates (separe each items as in beans, cheese, tortilla, lettuce…) or a heat them with your other burritos as quesadillas with greens on the side. So you don’t have to cook them a separate recipe — just perfect for everyone.

Ingredients
  

  • 1 tbsp organic olive oil
  • 2 organic garlic clovers minced
  • 1 organic onion chopped
  • 1 organic bell pepper chopped, red or green
  • 1 1/2 cup organic black beans
  • 1 1/2 cup organic white beans (or beans of your choice)
  • 1 cup mild or hot organic salsa (or more)
  • 1 tbsp organic chili powder
  • 1/2 tsp organic smoked paprika
  • 1 cup organic kale
  • 1/2 cup organic green sweat peas or corn
  • 1/2 cup vegan mozzarella cheese orange and/or white
  • 1 organic avocado
  • 10 organic tortillas
  • 2 cups organic cooked rice optional

Instructions
 

  • Preheat the oven at 350 F
  • Pour the olive oil into a pan, and once heated at about medium heat, sauté the garlic, onion and bell peppers to taste.
  • Mix in the black and white beans. Add 1/2 cup of salsa, chili powder, smoked paprika, kale, peas/corn, and cook at medium heat until hot.
  • Lay the tortillas on a greased stainless tray. Put the vegan burrito mixture into the tortillas. Add vegan cheese to taste, salsa, and, if desired, cooked rice, and fold the tortillas.
  • Cook for about 15 minutes.
